One grove
We buy the whole December pick from one family. Not a blend of whatever the co-op had. When you buy a bottle you are buying their year.

Picked in December
Early, while the fruit is still green. It gives less oil and more taste. That is the trade every good grower makes and most bottlers don't.

Pressed in six hours
Olives start to ferment the moment they leave the tree. Six hours is the difference between fruit and vinegar. That's the whole trick.

Dark glass, straight away
Light and air are what turn good oil ordinary. Bottled the same week, sealed, kept out of the sun.
One harvest a year
Buy the year, not the bottle.
The grove is picked once, in December. When that harvest runs out it is gone until the next one. In Tunisia families buy the year’s oil together and split it. You can do the same.
Buy what you will finish before next December. Olive oil is a fresh product and we would rather you ran out.

The olive is Chemlali.
Chemlali is the most planted olive in Tunisia. Small fruit, modest yield, a milder and rounder oil than the sharp varieties further north. It is not fashionable. It is what grows in our grove, and picked green and pressed fast it makes the oil this whole site is about. Green almond first, then the small cough.
The lab sheet
Every batch we bring into the United States is tested, and the sheet goes up on this site. December’s numbers go up when the harvest is pressed.
