Buy whichever white fish looks best that day. Cod, haddock, halibut. Fresh matters more than the name. The lemon roasts with the fish and turns soft and sweet. The olive oil goes on twice. Once before the oven. Once at the table. You will wash one tray and your plate. That is the whole evening.
What you need
- White fish fillets, one per person
- Two lemons
- A few cloves of garlic
- Extra virgin olive oil, a generous amount
- Salt
- Black pepper
- A small bunch of flat-leaf parsley
What you do
- 01Heat your oven high, as you would for roasting vegetables.
- 02Slice one lemon thin. Lay the slices on the tray.
- 03Crush the garlic cloves with a knife. Scatter them over the lemon.
- 04Pour olive oil over the lemon and garlic. Do not be shy.
- 05Pat the fish dry. Salt and pepper it on both sides.
- 06Lay the fish on the lemon. Pour more olive oil over the top.
- 07Squeeze half the second lemon over the fish.
- 08Roast until the fish turns white all through and flakes with a fork. Thin fillets cook fast, so check early.
- 09Chop the parsley and scatter it over the fish.
- 10Squeeze over the last of the lemon. Pour a little fresh olive oil on at the table.
meema knows best. Sit down and eat.
