Allergens follow the ingredients listed here. Check the labels on what you buy, like bread.

Put them in a pan with tomatoes and eggs. Nobody will complain. Nobody ever has.

This is how we use up the tray from Sunday. Peppers, onions, courgette, aubergine, a potato or two. Whatever you roasted works. The vegetables are already soft and sweet. Half the work is done.

One thing first. Use more olive oil than you think you should. The oil carries the spices. It makes the sauce taste like something.

What you need

  • 3 tablespoons extra virgin olive oil, plus more to finish
  • 2 cloves garlic, thinly sliced
  • 1 teaspoon harissa, more if you like heat
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground caraway
  • 2 to 3 cups leftover roast vegetables, roughly chopped
  • 1 can (14 oz) crushed tomatoes
  • Salt and black pepper
  • 4 to 6 eggs
  • A small handful of parsley or cilantro, chopped
  • Bread, for the pan

What you do

  1. 01Warm the olive oil in a wide pan over medium heat. Cast iron is best. Any heavy pan will do.
  2. 02Add the garlic. Cook it for one minute. Do not let it brown.
  3. 03Stir in the harissa, cumin and caraway. Cook for thirty seconds, until it smells good.
  4. 04Add the roast vegetables. Stir them through the oil and spices. Let them warm for three to four minutes.
  5. 05Pour in the tomatoes. Season with salt and pepper. Simmer for ten minutes, until the sauce thickens. Taste it. Add more harissa or salt if it needs it.
  6. 06Make small wells in the sauce with a spoon. Crack an egg into each one.
  7. 07Turn the heat to low. Cover the pan. Cook for five to eight minutes. The whites should be set. The yolks should still move.
  8. 08Take it off the heat. Pour a good line of olive oil over the top. Scatter the herbs.
  9. 09Put the pan on the table. Tear the bread. Sit down and eat.

A few things Meema knows

  • No leftover vegetables? Roast some. Or cook sliced peppers and onion in the oil first, low and slow, until soft.
  • Do not stir once the eggs go in. You will be tempted. Don't.

Leave the pan in the middle of the table. Plates are optional. Bread is not.
