Does olive oil go off?
Yes, and faster than people expect once it is open. Use it within a couple of months of opening, and within a year of the harvest. Olive oil is a fresh product, not a pantry fixture. It does not improve with age.
Two clocks run at once. One starts at the harvest. The other starts the moment you open the bottle.
Sealed and kept cool, reckon on about a year from the pick. Opened, reckon on a couple of months. Air does more damage than time on its own.
This is why the harvest date matters more than the best-before. A best-before can sit two years after a pick you were told nothing about.
Store it cool and dark with the cap on, away from the hob. Dark glass does half the work. The windowsill is a lovely place for a bottle and a terrible place for oil.
None of this makes old oil unsafe. It makes it dull, which for something you bought on taste is the worse outcome.
